Light and de­li­cious - th­ese are the key words that de­fine the cui­sine of L’Aca­cia, a gourmet restau­rant high above Saint-Tropez. Pier­rick Berthier, the restau­rant’s new chef, brings a breath of fresh air to the dishes of the Château de la Mes­sardière. Anx­ious to prove that he’s ca­pa­ble of pro­duc­ing sim­ple, re­fined and light dishes, the new chef’s great­est de­sire is to please the guests of his restau­rant with beau­ti­ful, fresh in­gre­di­ents hand-picked from the best pro­duc­ers in the re­gion. But he doesn’t plan on do­ing this all by him­self. As­sis­tant Chef Kevin Altier and Pas­try Chef Thomas Ci­val­leri are right by his side. To­gether, they started a culi­nary rev­o­lu­tion at the chateau. Af­ter work­ing in Saint-Malo, Saint-Tropez, Cor­sica and the moun­tains of Courchevel for over 20 years as a head chef in count­less Re­lais & Châteaux es­tab­lish­ments and lux­ury ho­tels, Pier­rick Berthier now steps into his new role in the kitchens of a chateau that’s al­ways been close to his heart: La Mes­sardière. Nes­tled atop a beau­ti­ful hill, the chateau of­fers sweep­ing views over Saint-Tropez and has long been a meet­ing point for those who ap­pre­ci­ate the seren­ity that de­fines th­ese his­tory-charged hills. Turned lux­ury ho­tel in 2012, this land­mark ho­tel has 57 suites and 60 guest rooms, each with a pri­vate ter­race or gar­den spe­cially de­signed to al­low guests to take full ad­van­tage of the sub­lime views.
