Pomelo, coconut and lemongrass salad
Even though I am an unconditional fan of eating fruit for dessert, I find that the grapefruit is one of those fruits that taste far better in savoury dishes. Its thick, dryish flesh is just perfect when coated in a dressing. This salad has an incredibly refreshing flavour while retaining a certain sweetness. Coconut and cashew nuts add a very pleasant crunchiness. If you cannot find any pomelos, then a grapefruit can be used instead; in which case, you may need to add a little more honey to counteract its tartness.
