Pomelo, co­conut and lemon­grass salad

Even though I am an un­con­di­tional fan of eat­ing fruit for dessert, I find that the grape­fruit is one of those fruits that taste far bet­ter in savoury dishes. Its thick, dry­ish flesh is just per­fect when coated in a dress­ing. This salad has an in­cred­i­bly re­fresh­ing flavour while re­tain­ing a cer­tain sweet­ness. Co­conut and cashew nuts add a very pleas­ant crunch­i­ness. If you can­not find any pome­los, then a grape­fruit can be used in­stead; in which case, you may need to add a lit­tle more honey to coun­ter­act its tart­ness.
