Spicy ap­ple and red berry cake

Serves 6

- 130g rice flour - 130g brown sugar - 1 tea­spoon bak­ing pow­der - mixed spice or cin­na­mon, ginger, vanilla... - 2 soup­spoons chia seeds - 2 soup­spoons toasted white sesame seeds - 2 eggs - 70g melted but­ter - 3 apples (2 for the cake and 1 for the dec­o­ra­tion) - 1 large hand­ful of red berries Mix all the dry in­gre­di­ents to­gether in a bowl: flour, sugar, bak­ing pow­der, spices, chia seeds and toasted sesame seeds. Then add the eggs and melted but­ter. Stir un­til the mix­ture is smooth. Slice the apples and add to the bowl with the diced red berries (keep­ing one ap­ple and some red berries for the dec­o­ra­tion). Grease a cake tin and spoon in the cake mix­ture. Ar­range the re­main­ing pieces of ap­ple and red berries on top, sprin­kle with spices, re­main­ing seeds and a lit­tle sugar. Bake for 45 min­utes at 210°C.
