Spicy apple and red berry cake
- 130g rice flour - 130g brown sugar - 1 teaspoon baking powder - mixed spice or cinnamon, ginger, vanilla... - 2 soupspoons chia seeds - 2 soupspoons toasted white sesame seeds - 2 eggs - 70g melted butter - 3 apples (2 for the cake and 1 for the decoration) - 1 large handful of red berries Mix all the dry ingredients together in a bowl: flour, sugar, baking powder, spices, chia seeds and toasted sesame seeds. Then add the eggs and melted butter. Stir until the mixture is smooth. Slice the apples and add to the bowl with the diced red berries (keeping one apple and some red berries for the decoration). Grease a cake tin and spoon in the cake mixture. Arrange the remaining pieces of apple and red berries on top, sprinkle with spices, remaining seeds and a little sugar. Bake for 45 minutes at 210°C.
