Lu-style broiled beef is not cooked di­rectly over fire, but mar­i­nated then placed in a hot cast-iron skil­let with spices, co­rian­der and leek. The re­sult is ten­der, tasty meat that isn’t eas­ily burned or over­cooked. It comes with thin, crispy sesame pock­ets for ex­tra mouth­feel without ab­sorb­ing the juices.
