“When I was a child, I craved cro­que­tas made by my grand­mother. These de­li­cious deep-fried bites of chicken and bechamel sauce ap­peared at our Christ­mas din­ner ev­ery sin­gle year. They were so crispy on the out­side and creamy on the in­side that my sib­lings, cousins and I would stuff our­selves with them. When the main course ar­rived, we would be so full that we couldn’t eat any more.”
