“Latkes are a tra­di­tional New York Jewish deli dish of fried potato cakes that we ab­so­lutely fell in love with. So we de­cided to bring to­gether a typ­i­cal New York dish and a typ­i­cal Hong Kong dish – char siu – and the flavours just work.”

These grated potato cakes, sit­ting on a bed of cool­ing tzatziki-like sauce, have been fried to pip­ing hot, golden per­fec­tion, and – some­what blas­phe­mously – topped with char siu and Chi­nese-style green onion and gin­ger paste. You won’t be able to stop at just one.
