“Latkes are a traditional New York Jewish deli dish of fried potato cakes that we absolutely fell in love with. So we decided to bring together a typical New York dish and a typical Hong Kong dish – char siu – and the flavours just work.”
These grated potato cakes, sitting on a bed of cooling tzatziki-like sauce, have been fried to piping hot, golden perfection, and – somewhat blasphemously – topped with char siu and Chinese-style green onion and ginger paste. You won’t be able to stop at just one.
