Mean­ing “lit­tle thigh” in Por­tuguese, cox­in­has are drum­stick-shaped bat­tered dumplings orig­i­nat­ing in Brazil. Herbed chicken fill­ing is en­cased in dough made from stock, potato and flour, then dry bat­tered and deep-fried. Of­ten found at Brazil­ian street stalls, they are served pip­ing hot with a per­fectly crisp crust.
