7. Ravi­oli and Tortellini

These two va­ri­eties of Ital­ian dumplings are made by en­clos­ing fill­ing in pasta. In ravi­oli, dol­lops of fill­ing are sealed be­tween two sheets of freshly rolled pasta and cut into pil­low shaped dumplings; tortellini are made with por­tions of fill­ing in­di­vid­u­ally wrapped in pasta squares with the cor­ners folded to­gether. Typ­i­cally filled with cheese, spinach, seafood or meat, and served with pasta sauces or broth.
