7. Ravioli and Tortellini
These two varieties of Italian dumplings are made by enclosing filling in pasta. In ravioli, dollops of filling are sealed between two sheets of freshly rolled pasta and cut into pillow shaped dumplings; tortellini are made with portions of filling individually wrapped in pasta squares with the corners folded together. Typically filled with cheese, spinach, seafood or meat, and served with pasta sauces or broth.
