Reviving the classics

A year ago, Hong Kong lost a beloved institution: the renowned Hokkaido sea urchin at Amber. The dish was removed to make way for new signatures – much to the chagrin of Hong Kong's dining elite. Well, it's time to dust off those motherof-pearl spoons, because the classic is back on the menu, along with five other notable dishes from the restaurant's archives, including the foie gras Chupa Chups and the Bresse poulard with black winter truffles. They're all being served as part of the six-course Amber Classics menu, available until the restaurant's renovation is complete next year.
