For one month only, famed Span­ish con­fec­tioner Javier Guil­lén is tak­ing over Café 103 at The Ritz-Carl­ton, Hong Kong. The chef, who has worked with the greats – in­clud­ing El Bulli’s Fer­ran Adrià and Pierre Hermé – has cre­ated the tan­ta­lis­ing Ecuador Choco­late Af­ter­noon Tea, avail­able through­out Novem­ber. The scrump­tious set high­lights the finest sus­tain­able choco­lates from Ecuador, made by hand from Ecuado­rian ca­cao, milk from the An­des and sugar cane from the coastal plains. Each one has a dis­tinct, Latin Amer­i­can-in­spired shape that helps to tell the unique story of Ecuador and its ca­cao. Only true choco­late lovers need ap­ply.
