The Les Amis Group’s expansion is guided by a strong passion for food cultures and their latest venture, Indigo Blue Kitchen, hits close to home. The restaurant serves Peranakan cuisine in a modern setting, featuring dishes close to the heart of Desmond Lim, Les Amis Group’s chairman. “This Peranakan restaurant is a heritage project for me as the recipes are my grandmothe­r’s and I would like to share them before they are lost forever,” he shares. Therefore, the food here is honest and familiar, like IB’S Nonya Poh Piah, which comes with special ingredient­s like Chinese sausage and dried sole fish sprinkle. The Bakwan Kepiting Soup is comforting to the core, with its rich broth and handrolled balls of crab, prawn, pork, and bamboo shoots. Meanwhile, the Apom with Three Pengats (durian, jackfruit, and banana) sweetly – and uniquely – rounds up the satisfying meal.
