This is the only Krug Room outside of France, where the French champagne house’s finest offerings are paired with executive chef Robin Zavou’s creative cuisine. The ambience resembles the intimate surroundings of the famed Orient Express train, from which you can watch chef Robin and his culinary team in action. The seasonal tasting menu features 10 courses and changes quarterly, with highlights being the premium abalone seasoned with togarashi, and chawanmushi, the kitchen team’s take on the Japanese egg custard dish using top-quality truffles—both are served with a glass of Krug 2006. The sea urchin prepared in a mousse form is another favourite, which is beautifully buttery and pairs wonderfully with the mildly acidic Krug Grande Cuvée 167 Ème Édition. There’s a personal touch with the chef bringing the dishes to the table and enriching the experience with explanations of the ingredients and inspiration.
