This discrete Sheung Wan venue has stood the test of time, thanks to its winning framework of stylish minimalism when it comes to the design, and no-holds-barred creativity when it comes to the food. The dailychang­ing menu is anchored in local and seasonal seafood, but includes enough gems hailing from Japan—from the buttery Kagoshima wagyu beef done sukiyaki style to the tiny Sawagani crabs that you eat whole, shell and all. Divided into three distinct categories (raw, smaller, bigger), you’re encouraged to sample a bit of everything; we recommend getting a handful of creative sashimi preparatio­ns, such as tai sea bream sashimi with dustings of karasumi and fragrant yuzu, or fluke sashimi with daikon, ponzu and yuzu kosho. Staff have the knowledge to guide you through not only the esoteric plates, but the extensive high ball and whisky list that you can’t help but sample a few glasses from over the course of a night.
