Wing Lei Palace is arguably the most palatial Chinese restaurant along Macau’s Cotai Strip. In a three-tiered dining room in shades of jade and gold, with auspicious patterns spread throughout the expansive dining room, the establishm­ent is an enlarged shrine to Cantonese cuisine—thanks to Chinese executive chef Tam Kwokfung’s decades of expertise. Among many highlights are the establishm­ent’s lychee wood-roasted barbecued meats, from char siu to roasted goose. Tam’s prowess in the kitchen is expertly showcased in dishes such as the crispy sea cucumber with supreme chicken sauce and the barbecued suckling pig with caviar. Double-boiled soups get the seasonal treatment, too, with everchangi­ng varieties throughout the year. Premium ingredient­s such as truffles make an appearance in the iconic vegetable fried rice with lychee-roasted duck, set to become a classic.
