On any given day, The Apron serves up a selection of up to 10 different oyster varieties, flown in from around the world and shucked to order. Staff can propose the oysters to fit your fancy, from sharply salty to sweet and creamy, and anything in-between. There’s also a more than adequate champagne list to ensure the perfect pairing with your chosen mollusc. The quality of food is high, which may seem slightly at odds with the restaurant’s setting beside the casino floor and open to the bustling Galaxy Macau Promenade. Put that to one side and focus on the food, for there are efforts at innovation across the small plates, salads and seafood sections; the Spanish turbot is a highlight, beautifull­y cooked and topped with a sharp, crunchy walnut salsa. The steaks are cut from superior quality beef— a wide range is available according to ageing preference and cattle variety— and these are perfectly cooked to the requested temperatur­e on the open grill. Desserts are limited or sourced from the nearby Dean & Deluca, but what comes before that is really why you’re there.
