SEN­SORY EVAL­U­A­TION

All brands were eval­u­ated by ex­perts at the food and nu­tri­tion lab­o­ra­tory of a re­puted col­lege of Delhi Univer­sity. Chilled and finely stirred sam­ples were pro­vided to pan­el­lists. The brands were rated by them on the fol­low­ing pa­ram­e­ters: • Colour and ap­pear­ance • Aroma and flavour • Sweet­ness • Taste • Af­ter­taste • Over­all ac­cept­abil­ity Scor­ing was done on the five-point scale where 5 stood for ex­cel­lent, 4 for good, 3 for aver­age, 2 for poor, and 1 for very poor.
