A most ba­sic food, milk pro­vides our body with vi­tal nu­tri­ents. Ad­e­quate con­sump­tion of milk and dairy prod­ucts from early child­hood and through­out life can help to make the bones strong and pro­tect them against dis­eases like os­teo­poro­sis (a de­bil­i­tat­ing, brit­tle bone disorder) in later life. It fol­lows that the safety as­pect of milk is of top­most im­por­tance, yet how much do you know? Is the milk you buy in the mar­ket pas­teur­ized or ster­il­ized? What dif­fer­ence does this make to the shelf life? And is boil­ing at home a must?

The main con­stituents of milk are milk fat and milk solids-not-fat (SNF). As per Food Safety and Stan­dards (Food Prod­ucts Stan­dards and Food Ad­di­tives), Reg­u­la­tions, 2011, the fol­low­ing types of milk can be sold in mar­ket:
