Food spoiled by flat sour or­gan­isms will pro­duce a sour smell and taste. As per Food Safety and Stan­dards (Food Prod­ucts Stan­dards and Food Ad­di­tives) Reg­u­la­tions, 2011, the flat sour or­gan­isms should not be more than 10,000 colony-form­ing units (cfu)/gram for prod­ucts that have pH less than 5.2 (pH in­di­cates the strength of the acid con­di­tion).
