Mus­tard Sauce These six brands tell it all

Mus­tard sauce ( in Hindi) is a pop­u­lar condi­ment much liked for its pep­pery notes. Made from the seeds of the mus­tard plant, this mul­ti­pur­pose condi­ment is com­monly used as a sand­wich spread or as an in­gre­di­ent in salad dress­ing, and even paired with meats, fish and cheeses. If you are a mus­tard sauce fan, you will not be starved for choice ei­ther—with the num­ber of brands in the mar­ket. Yet, are all of them safe for con­sump­tion, con­sid­er­ing that they use acid­i­fy­ing agents for en­hanc­ing taste as well as pro­long­ing the shelf life? Are they free from yeast and mould? This re­port checks six lead­ing brands of mus­tard sauce along these and other pa­ram­e­ters that are im­por­tant de­ter­mi­nants of qual­ity and safety.

The pa­ram­e­ters in­cluded pro­tein con­tent, to­tal sol­u­ble solids, acid­ity, preser­va­tives and yeast and mould count. One brand, Amer­i­can Gar­den, was im­ported from the USA. The other brands were man­u­fac­tured in In­dia. All six brands did rel­a­tively well in the tests – some scored bet­ter, though, es­pe­cially with re­gard to pro­tein, as dis­cussed in de­tail be­low.

The tests were con­ducted in an NABL-ac­cred­ited lab­o­ra­tory.
