This is the in­or­ganic residue that re­mains in a food prod­uct af­ter heat­ing. Ash is cal­cu­lated by heat­ing the sam­ple at 550 to 600 de­grees C, which de­stroys all or­ganic mat­ter. Ash in malt-based food shall not be more than five per cent by weight. There is no re­quire­ment for pro­pri­etary food.

• All the malt-based prod­ucts were within the per­mis­si­ble limit for to­tal ash.
