9 Massaged Kale Salad
1 bunch kale leaves, roughly torn; 1½ tsp freshly squeezed lemon juice; 2 tbsp extravirgin olive oil; ¼ tsp salt; 1 pear, cut into a medium dice; ½ cup goat cheese In a large bowl, mix kale, lemon juice, olive oil, and salt, and massage with your fingers until the kale is slightly wilted. Add chopped pear and cheese. Dress salad lightly with pomegranate vinaigrette. Finish with freshly ground black pepper and pomegranate.
