IN­GRE­DI­ENTS 1 cup goolar, cleaned and chopped 2 tsp roasted chick­pea flour or sattu 1 tsp each of minced gin­ger, gar­lic and green chill­ies 1 tsp garam masala 1/2 cup chopped co­rian­der and mint leaves Salt to taste Ghee to shal­low fry METHOD Boil the goolar in suf­fi­cient wa­ter till soft, drain and let it cool. Mash with the other in­gre­di­ents, ex­cept ghee, to make a dough-like mix­ture. Shape the dough into lime-sized balls and flat­ten them be­tween the palms. Shal­low fry in batches. Serve hot with tamarind or green chut­ney.
