INGREDIENTS 1 cup goolar, cleaned and chopped 2 tsp roasted chickpea flour or sattu 1 tsp each of minced ginger, garlic and green chillies 1 tsp garam masala 1/2 cup chopped coriander and mint leaves Salt to taste Ghee to shallow fry METHOD Boil the goolar in sufficient water till soft, drain and let it cool. Mash with the other ingredients, except ghee, to make a dough-like mixture. Shape the dough into lime-sized balls and flatten them between the palms. Shallow fry in batches. Serve hot with tamarind or green chutney.
