IN­GRE­DI­ENTS 1/2 cup (100g) black rice (serves 4 to 5 peo­ple) 5 cups (250ml) full-cream milk 1/4 cup (65g) white gran­u­lated sugar (add to taste) 1/2 tea­spoon ground green car­damom METHOD Rinse the rice and soak in wa­ter for about six hours or overnight. Drain the rice and trans­fer to a saucepan with the milk. Bring the rice to boil, then re­duce the heat, and sim­mer, stir­ring fre­quently for about 30 min­utes or un­til the rice is ten­der. Add sugar and cook for five more min­utes. Stir fre­quently. Garnish with car­damom and re­move from the heat. Serve hot, warm or cold.
