S C I E N T I ST S H AV E de­coded the se­cret struc­ture of fats us­ing X-ray science. The ba­sic mol­e­cules that make up edi­ble fats are triglyc­erides, or three hy­dro­car­bon chains known as fatty acids and a sweet­tast­ing glyc­erol mol­e­cule. The com­pu­ta­tional model could help us un­der­stand what makes choco­late and cheese taste so good, and how the taste and 'mouth feel' of yummy fats could be mim­icked in health­ier al­ter­na­tives.
