Don't soil it

This is re­gard­ing the ed­i­to­rial "Mat­ter of taste" (16-31 Au­gust, 2017). It is more im­por­tant now than ever for peo­ple to re­alise that the soil in which their food is grown needs to be man­aged at all lev­els. The amount of life in soils is far more than what is above. It takes hun­dreds of years to build fer­tile soil and just a mo­ment to de­stroy.
