Garden Green Flat Indian Beans Salad

SERVES 4 INGREDIENTS Fresh beans (papadi), stringed and cut into one inch pieces, 200 gms; cherry tomatoes, 50 gms; fresh bean sprouts, 50 gms; olive oil, 2 tsp; lemon juice, 1 tsp; salt and black pepper to taste; beetroot purée, lemon pieces and a slice of roasted multigrain bread for seasoning METHOD Blanch the flat beans in boiling water and let it cook briefly for three-four minutes. Drain, and rinse with cold water. Blend olive oil and fresh lemon juice. Add salt and pepper. Add flat beans, cherry tomatoes and bean sprouts, and toss well. Season with lemon slices, beetroot purée and roasted multigrain bread.
