SERVES 4 INGREDIENTS Fresh cot­tage cheese, 400 gms; spring onions, 150 gms; green chill­ies, 3; medi­um­sized toma­toes, cut into juli­ennes, 2; medium-sized onion, 1; turmeric pow­der, 2 tsp; red chilli pow­der, 2 tsp; gin­ger-gar­lic paste, 2 tsp; mus­tard seeds, 2 tsp; fresh co­rian­der pow­der, 4 tsp; oil, 2 tsp, salt and pep­per to taste; co­rian­der for gar­nish­ing METHOD Slice onion, spring onions and pa­neer (cot­tage cheese) into long pieces. Heat oil in a fry­ing pan. Add mus­tard seeds and sliced onions. Sauté un­til light brown. Add co­rian­der, red chilli and pep­per pow­ders, chopped green chill­ies and gin­ger-gar­lic paste. Add one cup of water. Keep the flame low and sauté the spices for a minute and then add the toma­toes. Add pa­neer and spring onions and let it cook for five min­utes. Fin­ish the dish by adding salt and pep­per. Sea­son with chopped co­rian­der. Eat with multi-grain roti/ missi roti/ lac­cha paratha.
