Paneer & Spring Onion Do Pyaza

SERVES 4 INGREDIENTS Fresh cottage cheese, 400 gms; spring onions, 150 gms; green chillies, 3; mediumsized tomatoes, cut into juliennes, 2; medium-sized onion, 1; turmeric powder, 2 tsp; red chilli powder, 2 tsp; ginger-garlic paste, 2 tsp; mustard seeds, 2 tsp; fresh coriander powder, 4 tsp; oil, 2 tsp, salt and pepper to taste; coriander for garnishing METHOD Slice onion, spring onions and paneer (cottage cheese) into long pieces. Heat oil in a frying pan. Add mustard seeds and sliced onions. Sauté until light brown. Add coriander, red chilli and pepper powders, chopped green chillies and ginger-garlic paste. Add one cup of water. Keep the flame low and sauté the spices for a minute and then add the tomatoes. Add paneer and spring onions and let it cook for five minutes. Finish the dish by adding salt and pepper. Season with chopped coriander. Eat with multi-grain roti/ missi roti/ laccha paratha.
