SAGO/ SABUDANA WAFFLE
Serves 2 Ingredients 2 medium potatoes, boiled with skin 1 whole egg or 3 egg whites (optional) ½ cup sago/ sabudana, soaked overnight ¼ cup coarsely powdered peanuts 2 teaspoons cumin powder 1 teaspoon chaat masala 1 green chilli, chopped finely 1 tablespoon chopped fresh coriander leaves Juice of ½ lemon Black pepper powder to taste Salt to taste Method Put potatoes in a bowl and mash them well with their skin. Add egg (or egg whites) and sago and beat well together. Add peanuts, salt, pepper powder, cumin powder, chaat masala, green chilli, coriander leaves and lemon juice and mix together till well blended. Heat a waffle iron. Pour a little mixture into it and cook till done. Make more waffles with the remaining batter. Serve the waffles with green chutney.
Note: This is a favourite for all ages from the young to the old. I often add egg to this recipe to complete the protein. It also brings down the glycermic index.
