SAGO/ SABU­DANA WAF­FLE

Serves 2 In­gre­di­ents 2 medium po­ta­toes, boiled with skin 1 whole egg or 3 egg whites (op­tional) ½ cup sago/ sabu­dana, soaked overnight ¼ cup coarsely pow­dered peanuts 2 tea­spoons cumin pow­der 1 tea­spoon chaat masala 1 green chilli, chopped finely 1 ta­ble­spoon chopped fresh co­rian­der leaves Juice of ½ lemon Black pep­per pow­der to taste Salt to taste Method Put po­ta­toes in a bowl and mash them well with their skin. Add egg (or egg whites) and sago and beat well to­gether. Add peanuts, salt, pep­per pow­der, cumin pow­der, chaat masala, green chilli, co­rian­der leaves and lemon juice and mix to­gether till well blended. Heat a waf­fle iron. Pour a lit­tle mix­ture into it and cook till done. Make more waf­fles with the re­main­ing bat­ter. Serve the waf­fles with green chut­ney.

Note: This is a favourite for all ages from the young to the old. I of­ten add egg to this recipe to com­plete the pro­tein. It also brings down the glyc­er­mic in­dex.
