En­dive is a leaf veg­etable. It is a mem­ber of the chicory fam­ily. En­dive has a crisp tex­ture and a sweet nutty flavour with a mild bit­ter­ness. It is also known as es­ca­role. It is com­monly used in sal­ads and soups, and is an ideal sup­ple­ment with salmon, caviar and cheese. The Bel­gian en­dive is one of the most pop­u­lar en­dives in the world.
