This is an Ital­ian whey cheese made from the sheep, goat or cow milk whey which is left-over. It has a creamy tex­ture with a mildly sweet flavour. Ri­cotta is a healtheir al­ter­na­tive to cot­tage cheese as it has five times more cal­cium. It can be eaten just as it is with lit­tle a salt, or pep­per and fresh herbs. It is pop­u­larly used in Ital­ian pasta dishes and desserts.
