Espresso Wal­nut Brownie

Grind 1 cup wal­nuts and 1 cup al­monds in a food pro­ces­sor un­til the tex­ture is fine. Com­bine 3/4 cup co­coa pow­der, 1-2 tsp espresso pow­der. Add dates to the pro­ces­sor and process. Re­move from the bowl and set aside. Add nut and co­coa mix­ture back into pro­ces­sor and while pro­cess­ing, drop small hand­fuls of date pieces. Process un­til a dough con­sis­tency is achieved. Add the brownie mix­ture to a small cake pan and add re­main­ing 1/2 cup roughly chopped wal­nuts. Toss to com­bine and evenly dis­trib­ute, and then press down with hands un­til it’s flat. Place in freezer to chill.
