Espresso Walnut Brownie
Grind 1 cup walnuts and 1 cup almonds in a food processor until the texture is fine. Combine 3/4 cup cocoa powder, 1-2 tsp espresso powder. Add dates to the processor and process. Remove from the bowl and set aside. Add nut and cocoa mixture back into processor and while processing, drop small handfuls of date pieces. Process until a dough consistency is achieved. Add the brownie mixture to a small cake pan and add remaining 1/2 cup roughly chopped walnuts. Toss to combine and evenly distribute, and then press down with hands until it’s flat. Place in freezer to chill.
