In a bowl, mix 1 cup al­mond milk and one tea­spoon vine­gar and set aside.

Add 2 limes zest and juice to two ap­ples (finely chopped) to make sure they don’t turn brown. Grease your cake pan well. Pre-heat oven to 180°C de­grees.

In a large bowl, whisk 2 cups flour, 2 tea­spoons bak­ing pow­der, 1 tea­spoon garam masala, 1/2 tea­spoon cin­na­mon pow­der, 1/4 tea­spoon gin­ger and lime zest. In an­other bowl, whisk to­gether al­mond milk and vine­gar mix, 3/4 cup brown su­gar, 1/2 cup canola oil and 1 tea­spoon vanilla ex­tract. Pour the wet in­gre­di­ents into the dry in­gre­di­ents and mix well. Fold in chopped ap­ple, and pour the mix­ture into the greased cake pan.

Bake for 50 min­utes till a skewer in­serted into cake comes out clean. While the cake is bak­ing, make the glaze. Heat 1/4 cup but­ter in a pan. Once golden brown, switch off the flame and pour into a bowl. Whisk in 3/4 cup pow­dered su­gar, one tea­spoon vanilla and 2-3 ta­ble­spoons dark rum. Once the cake is baked, in­vert it onto a bak­ing sheet. Driz­zle the glaze over the cake and let it set for 15 min­utes. Recipe by Richa from My Food Story
