In a bowl, mix 1 cup almond milk and one teaspoon vinegar and set aside.
Add 2 limes zest and juice to two apples (finely chopped) to make sure they don’t turn brown. Grease your cake pan well. Pre-heat oven to 180°C degrees.
In a large bowl, whisk 2 cups flour, 2 teaspoons baking powder, 1 teaspoon garam masala, 1/2 teaspoon cinnamon powder, 1/4 teaspoon ginger and lime zest. In another bowl, whisk together almond milk and vinegar mix, 3/4 cup brown sugar, 1/2 cup canola oil and 1 teaspoon vanilla extract. Pour the wet ingredients into the dry ingredients and mix well. Fold in chopped apple, and pour the mixture into the greased cake pan.
Bake for 50 minutes till a skewer inserted into cake comes out clean. While the cake is baking, make the glaze. Heat 1/4 cup butter in a pan. Once golden brown, switch off the flame and pour into a bowl. Whisk in 3/4 cup powdered sugar, one teaspoon vanilla and 2-3 tablespoons dark rum.
