Radicchio (rah-dee-kee-oh )
Italian in origin, it’s a leafy vegetable — a variety of leaf-chicory. Radicchio is predominantly used in salads. It looks like a red cabbage, but has a bitter taste and wine-red coloured leaves. Few of the popular radicchio salads are radicchio cabbage slaw with honey and radicchio salad with green olives and Parmesan. The vegetable is an excellent source of Vitamin C.
