Radic­chio (rah-dee-kee-oh )

Ital­ian in ori­gin, it’s a leafy veg­etable — a va­ri­ety of leaf-chicory. Radic­chio is pre­dom­i­nantly used in sal­ads. It looks like a red cab­bage, but has a bit­ter taste and wine-red coloured leaves. Few of the pop­u­lar radic­chio sal­ads are radic­chio cab­bage slaw with honey and radic­chio salad with green olives and Parme­san. The veg­etable is an ex­cel­lent source of Vi­ta­min C.
