Red Sauce Pasta
Heat 3 tbsp olive oil in a broad non-stick pan on a medium flame. Add bay leaves and sauté for 30 seconds. Add garlic and onions and sauté for 3 minutes. Add tomato puree and sauté for another 2-3 minutes.
Add tomato sauce/purée, basil, oregano, chilli flakes and sugar, mix well. Cook for 1 minute. Add chopped vegetables and mushrooms. Mix well and cook 5-6 minutes, while stirring occasionally. Remove the bay leaves.
Add pasta, toss gently and cook for 2 more minutes, while stirring continuously. Garnish with cheese and serve.
