Red Sauce Pasta

Heat 3 tbsp olive oil in a broad non-stick pan on a medium flame. Add bay leaves and sauté for 30 sec­onds. Add gar­lic and onions and sauté for 3 min­utes. Add tomato puree and sauté for another 2-3 min­utes.

Add tomato sauce/purée, basil, oregano, chilli flakes and sugar, mix well. Cook for 1 minute. Add chopped veg­eta­bles and mush­rooms. Mix well and cook 5-6 min­utes, while stir­ring oc­ca­sion­ally. Re­move the bay leaves.

Add pasta, toss gen­tly and cook for 2 more min­utes, while stir­ring con­tin­u­ously. Gar­nish with cheese and serve.
