CAKE-MIX­ING CER­E­MONY HELD

LUDHIANA: Cake Square, a cof­fee shop and con­fec­tionary, cel­e­brated the age- old tra­di­tion of cake mix­ing on Tues­day.

Manin­der and Swastika said cake mix­ing was a tra­di­tion and ush­ers in the Christ­mas sea­son for the bak­ery in­dus­try and was usu­ally held sev­eral days in ad­vance. Once the cake mix­ing cer­e­mony was over, we would pre­pare for the fes­tiv­i­ties to fol­low, with the sole aim of spread­ing cheer, joy and hap­pi­ness all around.

Cake Square's ex­ec­u­tive chef Chaman Sharma along with his team got to­gether an in­ter­est­ing ar­ray of fruits (raisins, glazed red cher­ries, orange peel, le­mon peel, black­cur­rants, dates, dried apri­cots, figs and prunes; nuts (wal­nuts, cashew, almond flakes and pis­ta­chio); and spices (ground car­damom, cinnamon and cloves). End­less bot­tles of spir­its were poured into the mix while a num­ber of gloved hands kneaded the con­coc­tion tire­lessly. Doc­tors, lawyers and reg­u­lar guests of the shop wore chef caps, aprons and gloves and helped mix­ing the ingredients en­thu­si­as­ti­cally for the mak­ing of a "rich plum cake".

Apart from plum cake, other Christ­mas spe­cial cakes would in­clude banana nut cake, date and wal­nut cake, blue­berry cake and fes­ti­val choco­lates.
