CAKE-MIXING CEREMONY HELD
LUDHIANA: Cake Square, a coffee shop and confectionary, celebrated the age- old tradition of cake mixing on Tuesday.
Maninder and Swastika said cake mixing was a tradition and ushers in the Christmas season for the bakery industry and was usually held several days in advance. Once the cake mixing ceremony was over, we would prepare for the festivities to follow, with the sole aim of spreading cheer, joy and happiness all around.
Cake Square's executive chef Chaman Sharma along with his team got together an interesting array of fruits (raisins, glazed red cherries, orange peel, lemon peel, blackcurrants, dates, dried apricots, figs and prunes; nuts (walnuts, cashew, almond flakes and pistachio); and spices (ground cardamom, cinnamon and cloves). Endless bottles of spirits were poured into the mix while a number of gloved hands kneaded the concoction tirelessly. Doctors, lawyers and regular guests of the shop wore chef caps, aprons and gloves and helped mixing the ingredients enthusiastically for the making of a "rich plum cake".
Apart from plum cake, other Christmas special cakes would include banana nut cake, date and walnut cake, blueberry cake and festival chocolates.
