City based entrepreneur, Sudha Thomas left her decade long IT career in Belgium and came back home earlier this year to set up this chocolate shop specialising in Belgian chocolates. Her mastery of the recipes came after a strenuous six month training period with a Belgian chocolatier, during which time she claims to have graduated from scrubbing the floors to personally handling the chocolates for him. Sudha’s finest are soft- cored chocolates— with fillings like English caramel, raspberry, strawberry and passion fruit. While these recipes are Sudha’s own, her Hazelnut and Belgian cream- flavoured chocolates are inspired from the celebrated Belgian variety. As their fine quality and meticulous recipe can often get a beating in Chennai’s heat, Sudha has had to tweak the recipe to extend the shelf life of her goodies here. Nevertheless, Chokobel is fast moving up the list of favourite haunts for the city’s chocolate lovers.
