At Hy­att Re­gency’s Chi­nese restau­rant Stix, more ex­cit­ing than the prospect of good food, is the run- up to it. You’re greeted by sights and sounds of siz­zling pans and a bustling kitchen that gives you the feel of a hawker- style noo­dle stall. The 73- cover restau­rant has dark wooden panels, and an uber- stylish high ceil­ing. It serves fare from the Sichuan re­gion. “Sichuan food has a lot of grilled veg­eta­bles with strong flavours of gar­lic and ginger and is served as it’s made,” says Oliver, the sous chef. steamed pork meat balls in oys­ter sauce and Fried Noo­dles with sea­sonal veg­eta­bles. They have also re­cently in­tro­duced a siz­zler sec­tion from which we rec­om­mend the Silken Tofu and Co­rian­der Lamb which are spec­tac­u­lar and avail­able at din­ner­time. The per­fect end to your meal here is the melt- in- the- mouth Date Pan­cake driz­zled with honey and se­same seeds.
