At Hyatt Regency’s Chinese restaurant Stix, more exciting than the prospect of good food, is the run- up to it. You’re greeted by sights and sounds of sizzling pans and a bustling kitchen that gives you the feel of a hawker- style noodle stall. The 73- cover restaurant has dark wooden panels, and an uber- stylish high ceiling. It serves fare from the Sichuan region. “Sichuan food has a lot of grilled vegetables with strong flavours of garlic and ginger and is served as it’s made,” says Oliver, the sous chef. For a fiery start, try the Sichuan- style Chilli Chicken; vegetarians must try the fried string beans in garlic sauce The main course is best begun with something hearty, we tried the
steamed pork meat balls in oyster sauce and Fried Noodles with seasonal vegetables. They have also recently introduced a sizzler section from which we recommend the Silken Tofu and Coriander Lamb which are spectacular and available at dinnertime. The perfect end to your meal here is the melt- in- the- mouth Date Pancake drizzled with honey and sesame seeds.
Insider tip Ask for a hot pot and make your own soup and main course with the large variety of meats and vegetables
