The Fly­ing Ele­phant is a restau­rant of sto­ries. At The Park Hy­att, they call it a ‘ home within a home’. The whole prop­erty has been de­signed by de­signer Ge­orge Wong and The Fly­ing Ele­phant is the most stun­ning cre­ation of it. It dra­mat­i­cally ex­pands over seven ver­ti­cal lev­els, and has five open, in­ter­ac­tive kitchens on each level, serv­ing dif­fer­ent cuisines. The restau­rant is open only for din­ner and de­spite its mag­ni­tude it is un­in­tim­i­dat­ing and warm. “You know the suc­cess of a meal when you see it be­ing en­joyed by a group of peo­ple,” says Megha Bala­sub­ra­ma­nian, Chef- de- Cui­sine. The menu fea­tures In­dian, Turk­ish, Western and South­east Asian cuisines. The Wild Mushroom Br­uschetta is a great way to start, as is the Ga­louti kebab. If you love seafood, try the Tep­pan fried tiger prawns with cherry toma­toes, ca­per­ber­ries, caramelised lemon and arugula. For dessert, make sure to try the Tiramisu and Fruit Pavlova. The por­tions are gen­er­ous and the flavours take you on a sweet high.
