Span­ish Tor­tilla

• Eggs 6 • Onions (chopped) 2 • Gar­lic 1 clove • Pota­toes 2 • Smoked Pa­prika 1 tsp • Pars­ley gar­nish • Olive Oil ¼ cup • Salt and black pep­per to taste


• Wash and peel the potato, fry them in olive oil till cooked over low heat (no colour to be ob­tained) • Beat the eggs in a bowl. Add onions, smoked pa­prika, ad­just the sea­son­ings, pour it over pota­toes in the pan • When the eggs start fry­ing take a plate to cover the pan and flip it then cook again over low heat • Gar­nish with pars­ley and serve
