It was an unexpected thrill, when Pierre Hermé, a fourth-generation pastry chef from Paris flooded the hall with platters full of thinner-than-eggshells macaroons. As a collective “ooh” swept through the ballroom, he explained why his macaroons are among Paris’ best: He can taste them in his head.
