Don’t miss the dou­ble cooked Spiced Caramelised Pork Belly which re­quires more than two days of prepa­ra­tion. Mar­i­nated and then slow cooked, it’s pressed down with a weight to make it dense in tex­ture and then cut in por­tion sizes. The sec­ond and fi­nal step of cook­ing in­volves toss­ing it in a chilli caramel sauce.
