Chaat and LCB cookouts
If you’re a culinary enthusiast, chef Colin Westal’s debut visit to Mumbai next week, as part of an India tour, should make you smile. Globally known for creating fine seafood, Westal is a cuisine chef at the prestigious Le Cordon Bleu’s London campus. During his visit here, he will collaborate with chefs Rakhee Vaswani and Rachel Goenka to offer demo sessions (there’s one planned at Sophia Polytechnic too) and host an invite-only seafood lunch. He’ll also drop in at a Lower Parel café for an open house. “I’m looking forward to experiencing India’s culture and cuisine. I am excited to try the street food, especially the chaat and regional cuisines. I hope to enhance my culinary knowledge; not only teach, but also learn,” the chef shared with this diarist.
