Veg­etable Pasta Salad is a quick, easy and healthy salad recipe. Made with read made penne pasta, green veg­eta­bles and yo­gurt, this low carb recipe is apt for pot luck and kitty par­ties. Pasta is one in­gre­di­ent that you can use in a va­ri­ety of ways. The best thing about pas­tas is that they do not have a taste of their own and hence they eas­ily blend with any type of in­gre­di­ent. The se­cret of mak­ing good pasta lies in its sauce. If you are mak­ing a main dish with pasta, en­sure that the sauce is aro­matic and flavour­ful. It is a good idea to use a lot of gar­lic and basil be­cause they re­tain their flavour even after be­ing cooked for long. 2 ta­ble­spoon pesto sauce

1/2 cup green olives

3 pinches salt

2 ta­ble­spoon grated cheese-ched­dar 1 tea­spoon re­fined oil

1/3 cup yo­ghurt (curd)

1 medium chopped tomato 1 hand­ful de flow­ered broc­coli 1 pinch black pep­per

4 cup wa­ter

How to make Veg­etable Pasta Salad To prepare this pasta salad which is su­per healthy, take a medium sized pan and put four cups of wa­ter. When it comes to a boil, add pasta with a pinch of salt and one tea­spoon oil. The salt is im­por­tant as your pasta will taste bland if you add salt only in the sauce and the oil will pre­vent pasta from stick­ing to­gether. Cook the pasta al dente or till it is al­most done. Drain the pasta and rinse un­der run­ning cold wa­ter. It will im­me­di­ately bring the cook­ing process to a halt. If you feel your pasta is slightly over­done, add some ice. Now in a bak­ing dish, com­bine all the re­main­ing in­gre­di­ents and semi cover with grated cheese. Bake the dish for few min­utes so that the cheese melts. This healthy yet de­li­cious pasta salad recipe tastes best when warm.
