Carrot Cheesec N Egg Sandwiches
6 slices (edges trimmed) white bread 2 small cups grated carrots 1 small cup grated cheese 2 mashed well soft boiled eggs 1 tbsp (melted) salted or white butter
1 tbsp tomato ketchup salt and pepper (optional)
Mix together carrots, eggs and cheese. Apply thin layer of butter on 3 slices and ketchup on other 3 slices.
Spread a layer of prepared mixture on each buttered slice. Cover with ketchup slice.
Cut into triangles and serve.
