Car­rot Cheesec N Egg Sand­wiches

6 slices (edges trimmed) white bread 2 small cups grated car­rots 1 small cup grated cheese 2 mashed well soft boiled eggs 1 tbsp (melted) salted or white but­ter

1 tbsp tomato ketchup salt and pep­per (op­tional)


Mix to­gether car­rots, eggs and cheese. Ap­ply thin layer of but­ter on 3 slices and ketchup on other 3 slices.

Spread a layer of pre­pared mix­ture on each but­tered slice. Cover with ketchup slice.

Cut into tri­an­gles and serve.
