AUS­TRALIAN STYLE CORN ON A COB WITH PESTO

IN­GRE­DI­ENTS: For corn cobs:

2 corn cobs – husks re­moved

For pesto:

1 cup basil leaves 2 pods gar­lic 2 an­chovies 2 tbsp roasted sun flower seeds 1 red chilli 2 tbsp grated Parme­san cheese 1 tsp or more le­mon juice 4 tbsp olive oil

METHOD

To pre­pare the pesto: Blend all the in­gre­di­ents in a mixer to ob­tain a fine paste like struc­ture.

Boil the corn cob in boil­ing hot water for 10 min­utes or so till ten­der. Lace with the pesto and serve.
