JALEPENO AND CORN FRITTERS
1 cup corn niblets 3 tbsp corn flour 3 tbsp cream cheese 1 cup mashed potatoes 3-4 jalepeno – cut into small pieces 1 tsp coriander powder 1 tsp paprika 5 tbsp flour oil for pan frying or deep frying 3 tsp lemon juice
Steam the corn niblets in water till tender. Drain out all the water completely. Place in a mixing bowl and add the remaining ingredients. Divide the mixture into portions. Shape into round ‘tikkies’ or fritters and pan fry or deep fry a few at a time. This is a great snack item.
