JALEPENO AND CORN FRIT­TERS

IN­GRE­DI­ENTS:

1 cup corn niblets 3 tbsp corn flour 3 tbsp cream cheese 1 cup mashed pota­toes 3-4 jalepeno – cut into small pieces 1 tsp co­rian­der pow­der 1 tsp pa­prika 5 tbsp flour oil for pan fry­ing or deep fry­ing 3 tsp le­mon juice

METHOD

Steam the corn niblets in water till ten­der. Drain out all the water com­pletely. Place in a mix­ing bowl and add the re­main­ing in­gre­di­ents. Di­vide the mix­ture into por­tions. Shape into round ‘tikkies’ or frit­ters and pan fry or deep fry a few at a time. This is a great snack item.
