Nat­u­rally Chef Fre­chon uses only the very best sea­sonal pro­duce, like black truf­fles from Périg­ord, caviar from Sologne, line-caught whit­ing from Saint-gilles-croix-de-vie and the rich­est Nor­mandy but­ter to craft dishes of­ten in­spired by a fra­grance, a story or a chance en­counter, but al­ways in­spired by the cul­ture of ter­roir and French culi­nary her­itage. The menu is full of ex­cep­tional dishes like his sig­na­ture Mac­a­roni stuffed with black truf­fle, ar­ti­choke and duck foie gras and grat­inéed with aged Parme­san, as well as deserts like the Black Truf­fle by Pas­try Chef Julien Al­varez. Set over two floors con­nected a wide sweep­ing stair­case, the ho­tel's sec­ond Miche­lin-awarded restaurant is the on­es­tarred 114 Faubourg brasserie. Here, Chef Fre­chon of­fers in­spired tra­di­tional Parisian cui­sine like duck pâté en croûte with pick­led veg­eta­bles, ar­ti­choke soup with pan-seared foie gras and black truf­fle emul­sion and the leg­endary Vanilla Bour­bon mille-feuille with salted but­ter caramel.

As one would ex­pect, the fa­cil­i­ties are im­pres­sive and in­clude a su­perb so­lar­ium and pool on the sixth floor and an ex­cep­tional spa. An oa­sis of stylish calm and lux­ury, the pool opens onto a broad ter­race and is framed both sides by floor-to-ceil­ing win­dows and two trompe l'oeil fres­cos by pain­ter Pier­re­marie Rudelle fore and aft. De­signed to re­sem­ble the deck of a sail­boat, this cre­ates the im­pres­sion of sail­ing to­wards the Ho­tel du Cap-eden-roc in An­tibes.

Just like the pool, the Spa Le Bris­tol by La Prairie com­bines tran­quil­lity and re­fine­ment.
