Kaum, which means “clan” or “tribe” in Indonesian, works closely with remote tribal communities and local producers across the archipelago to rediscover Indonesia’s rarest native ingredients and nearly-forgotten cooking techniques. If the one in Hong Kong already features the latter, Kaum Bali definitely shines the spotlight on the former with unique creations like buah es krim rujak, which is a delicious assembly of marinated tropical fruit and frozen pomelo with a sweet, sour and spicy sherbet.
