Founded by ex-At­tarine ex­ec­u­tive Chef Ja­cob Bur­rell and his wife, Parachute ( Jl.SubakSar­i13No.8-4, Ti bu ben eng, North Ku ta, Bali ;+62 81337423010;parachute­bali.com) is a wood fire based restau­rant of­fer­ing west­ern food with a “re­spect and un­der­stand­ing for lo­cal fla­vors.” Many of the dishes on the menu are sourced from lo­cal farm­ers and ar­ti­sanal fish­er­men. Ac­cord­ingly, the menu re­flects the laid-back na­ture of the venue’s set­ting. While the place has Scal­lion But­ter and wood-fired fish, chicken, pork, beef and duck, half of the menu is ac­tu­ally veg­e­tar­ian. Parachute also fea­tures a va­ri­ety of wood-fired bread and light deserts based around lo­cal in­gre­di­ents. This in­cludes the Cof­feeCar­damom Pot de Crème, WoodFired Crepes with Palm Sugar But­ter and many more.
