1945 ( Jl.Asi­aAfrikaNo.8,Fair­mon­tJakarta;+622129703333;fair­mont.com/ jakarta), an up­scale In­done­sian restau­rant of­fer­ing au­then­tic In­done­sian fla­vors with mod­ern in­ter­pre­ta­tions, re­cently in­tro­duced its new chef, Ad­hi­tia Julisiandi, who brings along his vast culi­nary ex­per­tise to recre­ate a new menu. By ap­ply­ing molec­u­lar gas­tron­omy tech­niques, In­done­sian dishes are rein­ter­preted as fine gourmet cui­sine. A great ex­am­ple would be the Short Ribs Maranggi. Made for two per­sons, the dish fea­tures short ribs mar­i­nated for 48 hours in Maranggi sauce, com­ple­mented with grilled tape uli and Colo-colo dip. The Martabak Ma­nis 1945, a Mille-feuille style sweet pan­cake, served with fer­mented black rice and co­conut, mean­while, of­fers an up­dated twist on a tra­di­tional In­done­sian snack.
